Dad's Cabbage

1 medium onion (chopped)
1 medium bell pepper (chopped)
1 clove garlic (minced)
1 lb lean ground beef
1 tbs Worcestershire sauce
1 tbs canola oil
1 medium head of cabbage (chopped)
cajun seasoning, salt and pepper to taste

  1. Heat oil in stock pot over medium-high heat.
  2. Add onion and bell pepper and saute until tender.
  3. Add garlic, ground meat and Worcestershire sauce and cook until meat is browned.
  4. Add cabbage without stirring and turn heat down to medium.
  5. Once cabbage becomes tender, stir to combine with meat mixture.
  6. Season with cajun seasoning, salt and pepper.

Notes: I first made this dish as part of the southern new years day tradition of having ham, black-eyed peas and cabbage. It quickly became a family favorite, even with the kids.

Serves 6.

Feta Burgers


Feta Burgers

2 lb lean ground meat
1 package frozen chopped spinach, thawed
1 package feta cheese
1 can Rotel tomatos
1 egg
1 tbs Worcestershire sauce 
garlic powder to taste
salt a pepper to taste
  1. Squeeze as much of the liquid out of the spinach as possible. The dryer the spinach the better the patties hold together.
  2. Mix all ingredients in large bowl until combined (do not over mix).
  3. Form patties from mixture.
  4. Cook over medium high heat in large oiled skillet to desired doneness.
Notes:
  1. We usually eat these without buns or condiments, but with sides and/or a salad.
  2. I have occasionally grilled chopped onions, bell pepper and garlic and added to the mixture (I like it better this way, but the kids not so much).

Serves: 6
